Dark Chocolate Granola Bark!

When I first heard of people eating 'chocolate bark' ... I had a few questions.

Although I'm sure I tried to eat a bit here and there as a kid, 'bark' as I'd always know it was the outer covering of a tree trunk - not exactly what I'd call food unless in a survival situation, or perhaps to be used as a medicine like Eucommia Bark.

After a bit of Googling however, my ignorance was pleasantly dissolved and from what I could see, I was an instant fan.

That's why when the lovely Adrianne from Sweet Caramel Sunday came to me saying she'd used our Energy Mix Blend to make Dark Chocolate Granola Bark, I knew we were in for an absolute treat!

These are incredibly easy to make (literally 2 ingredients) and serve as the perfect energy snack for taking on any outdoor adventure, getting you through that workday slump or throwing in the kids lunchboxes for a quick and easy treat. Completely natural and loaded with anti-oxidants, fibre and good fats.

Dark Chocolate Granola Bark:

The combination of the crunchy texture of the granola pairs with the bitterness of the dark chocolate to give you a chocolate fix at snack time that also has health benefits! - Adrianne

Ingredients:

  • 125 grams dark chocolate melts or bits (any will do, so pick your favourite brand!)
  • 1/3 cup energy mix granola (From The Bircher Bar)

Method:

  1. Line a baking tray with baking paper
  2. Add your melts or chocolate to a microwave safe container. Heat for 1 minute on high. Take out and stir. Repeat heating in 3 x 30 second segments, stirring in between. (Note: If you don't have a microwave or prefer not to use them, you can melt your chocolate using the super easy 'double boiler' method - check it out here)
  3. Once melted, spoon chocolate onto baking tray using a soup spoon 
  4. Sprinkle granola over melted chocolate and then place tray in the fridge 
  5. Bark will be set in 30 minutes 

Recipe Notes:

  • Be careful to not overheat the chocolate which happens so easily! If you stir the chocolate as it melts you will see that it is ready just as the last melts or chips loose their shape and become liquid

It's so easy to prepare a big batch of ahead of time and keep in the fridge - I love a recipe that's all natural, packed with flavour and keeps giving for a few weeks!
