The Recipe: Espresso Honey Granola Cookies!
I was inspired by some beautiful products (hello espresso infused honey!) from The Bircher Bar to create these delicious, healthy cookies as a perfect on the go snack or cheeky brekkie.
Using a granola full of healthy fats, satiating fibres and protein, these cookies are a perfect (& nutritionally approved) snack to keep your hunger at bay and turn to as an alternative to a sweet treat!

Ingredients:
2 cups of muesli ( I used a mix of The Bircher Bar's Paleo + GF Energy Mix & Classic-styled Premium Mix, if you don’t have this use your own or combine nuts, seeds , oats and buckinis)
1 tbsp instant coffee mixed with a tiny bit of water
2 tbsp coconut oil
2 tbsp espresso infused honey ( or regular, maple syrup if vegan)
1/2 cup almond meal ( give or take depending on how much water from the coffee you use, will effect consistency)
1 tsp baking soda
1 tsp cinnamon
Method:
- Preheat oven to 180 degrees
- Place all ingredients but muesli in a blender and combine
- Stir through the muesli so it doesn't get ground up and stays chunky
- Roll into desired size balls and lightly press on each one so it flattens a bit
- Bake for 25 mins and enjoy!
Note: I topped mine with some coffee beans. Try adding your fave superfoods like some coconut on top or drizzled dark choc
