The Recipe: Spiced Beetroot Crepes
Ingredients:
- 100g flour
- A pinch of saltย
- 1 tsp sugar
- 1 tsp baking powder
- 1 tsp lemon juice
- 2 tsp beetroot latte mix
- 200g almond milk
Method:
Whisk all your dry ingredients together before slowly adding in your lemon juice and almond milk while stirring.
Stir until you have a smooth batter and leave it to set for about 10 minutes.
Cook your crepes in a skillet on medium high heat by pouring in about ยผ of the mixture for each crepe and spreading it out with a ladle in circular motions to create a thin, round crepe.
Cook on one side until bubbles start to form and the crepe is ready to be flipped (this shouldnโt take much more than 30 seconds to a minute.)
Flip with a spatula and cook for a short while on the other side until the crepe is cooked all the way through.
Plate up your crepes with some fresh fruit, chopped vegan chocolate, as well as some coconut yoghurt mixed with The Bircher Bar Five Spice Cacao and some sweetener of choice.
